Darryl Postelnick’s Filet Crisps

Serves 3-4 people
Ingredients
- 2 tablespoons bacon drippings*, divided
- Three to four cloves of minced garlic
- Butter, 2 cups
- Two teaspoons of kosher sea salt, divided
- Divided into 2 teaspoons of ground black pepper
- 1½ teaspoons chopped fresh rosemary
- 1½ teaspoons fresh thyme leaves
- 1 (16-ounce) French baguette, cut into ½ -inch slices
- 2 (12-ounces) beef fillets
- 1 (5.2-ounce) package garlic and herb Gournay cheese*
Instructions
- Preheat oven to 450°.
- Melt 1 tablespoon of bacon drippings in a small saucepan over medium heat. Add the garlic and stir constantly until it is tender. This should take between 1 to 2 mins.
- Stir together butter and garlic in a small bowl. Add 1 teaspoon of salt, 1 tablespoon of pepper, rosemary and thyme. Stir until well combined.
- Place baguette pieces in a large cast iron skillet.
- Bake for 2 to 3 minutes. Spread the butter mixture over each baguette, and bake it for 10 seconds until it is lightly toasted. Remove the skillet.
