Philippa Davis recommends a delicious alternative to lamb for Easter Sunday lunch

For a richer and more complex taste, serve mutton instead of lamb.

Easter doesn’t have to mean spring lamb. Try this delicious alternative recipe! Slow cooked shoulder of mutton, with roasted radishes and boozy potatoes?

SLOW COOKED MUTTON SHOULDER WITH ROASTED RADISHES BOOZY POTATOES BURNT BUTTER BLACK OLIVE SALSA VERDE

Serves 8

  • Shoulder bone for 2.6kg of mutton, or hogget
  • 4 small red onions, peeled and finely sliced
  • 8 celery sticks, finely sliced
  • 8 cloves of peeled garlic, finely chopped
  • 2 tbsp finely minced rosemary
  • 100ml of dry white wine
  • Water or light game stock in 200ml
  • Radishes 200g

Burnt Butter Salsa Verde

  • 50g finely chopped parsley
  • 100g pitted black Olives, finely chopped
  • 2 tsp. finely chopped capers
  • 8 Anchovies, finely sliced
  • 4 tsp of lemon juice
  • Red wine vinegar, 2 tsp
  • Butter Unsalted 200g

Boozy roast potatoes

  • 1.6kg Roasting Potatoes, washed and sliced into 2cm cubes
  • 2 tbsp finely minced rosemary
  • 100ml olive oil
  • Dry white wine 200ml

Method

  1. Preheat the oven to 230°C/450°F/Gas Mark 8.
  2. In a roasting pan, combine the celery, red onions, garlic, thyme, and wine with the stock and rosemary. Place the meat over the mixture and season it.
  3. Cover the baking paper with a foil sheet and seal it tightly.
  4. After 30 minutes of roasting, reduce the heat and continue to cook the meat for 3 more hours until it is tender.
  5. Once the meat is cooked, remove the parchment paper and foil. Scatter the radishes on top and continue roasting for 30 more minutes.
  6. Rest for 30 minutes with a loosely-covered cover before serving.
  7. Pour the boozy potato, combine all ingredients in a large bowl. Pour into a roasting tray lined with baking paper and cook in the oven at 180°C/ 350°F/Gas Mark 4 for 1 hour, turning once.
  8. To make the burnt-butter salsa verde, combine everything in a bowl except the butter.
  9. On a low flame, melt the butter gently in a small saucepan. Once you see golden flecks appearing on the bottom of your pan, stir it gently for 15 seconds more and then pour the butter into the bowl along with the rest of the ingredients. Stir well.

Serving

To serve the slow-cooked shoulder of mutton on a platter, place the potatoes, radishes, and veg in the mutton roasting pan and then top it with the meat.

Serve the thick slices of bread with the salsa verde.
