Cajun Pork Chops Over Linguine

Ingredients
  • Salt kosher 2 teaspoons
  • Black pepper, 1 teaspoon
  • 2 teaspoons of garlic powder
  • 2 teaspoons blackened seasoning*
  • 2 tablespoons of bacon grease
  • 4 (8-ounce) pork chops (about 1 inch thick)*
  • Prepare 1 (16-ounces) package of fettuccine according to the instructions on the package
  • 2 cloves chopped garlic
  • 1 large shallot finely chopped
  • 1⁄4 cup red wine, plus more if needed.
  • 1 cup chicken broth
  • Fresh mushrooms, 8-ounce package
  • 2 tablespoons of unsalted butter
  • 1 cup heavy whipping Cream
  • 1 cup freshly grated Parmesan, plus extra to garnish

Instructions
  1. Combine salt, pepper and garlic powder in a small bowl. Add the blackened seasoning. Pork chops should be dried with paper towel. Season the chops evenly with the mixture.
  2. Heat a large skillet made of cast iron over a medium heat. Heat bacon grease until it melts.
