Southern Meyer Lemon Poundcake

(Serves 12)

1 1 ⁄2 cups butter, at room temp.

2 1 ⁄2 cups granulated sugar 6 large eggs, at room temp.

2 tsp. vanilla

1 tbsp. fresh Meyer lemon juice

1 tbsp. Meyer lemon zest

3 cups all-purpose flour

1 ⁄2 tsp. Salt

1 tsp. 1 tsp.

1 cup of sour cream at room temperature.

Directions:

1. Heat oven to 350°F. Spray both parts of a 10″ tube pan with baking spray. Butter and sugar can be creamed in a stand-mixer with paddle attachment or large bowl using a mixer. Add the eggs, vanilla extract, lemon zest and juice, and mix well. Add remaining ingredients. Mix ingredients again.

2. Pour batter into pan. Bake for 60 to 70 minutes.
