You may think of sourdough as a chewy, crusty loaf, but the version we’re presenting is a soft, richly flavored loaf. It’s the perfect bread for your ultimate grilled cheese. You can also rub garlic onto a toasted slice of sourdough, and then top it with ripe tomatoes, drizzled with olive and basil oil. Enjoy a delicious slice of toast topped with butter, flaked sea salt and a drizzle of olive oil.

This recipe makes 1 loaf
Ingredients
  • 1½ cups (190 grams) bread flour
  • 1½ cups (195 grams) whole wheat flour
  • 2½ teaspoons (7.5 grams) kosher salt
  • 1¼ cups (300 grams) warm water (80°F/27°C to 90°F/32°C)
  • ½ cup (113 grams) ripe Sourdough Starter
  • Olive oil 2 tablespoons (28 g)
  • Dusting flour for all-purpose flour

Instructions
  1. Whisk together the bread flour, whole-wheat flour and salt in a large bowl. Add 1¼ cups (300 grams) warm water, Sourdough Starter, and oil; stir together until a shaggy dough forms and no dry spots remain.
  2. Cover and let rise in a warm, draft-free place (75°F/24°C) for 4 hours, folding dough in bowl every 1 hour. To fold, gently stretch and pull one side of the dough and fold it back on itself. Repeat this process for all four sides.
