Sourdough sandwich loaf
This recipe makes 1 loaf
Ingredients
- 1½ cups (190 grams) bread flour
- 1½ cups (195 grams) whole wheat flour
- 2½ teaspoons (7.5 grams) kosher salt
- 1¼ cups (300 grams) warm water (80°F/27°C to 90°F/32°C)
- ½ cup (113 grams) ripe Sourdough Starter
- Olive oil 2 tablespoons (28 g)
- Dusting flour for all-purpose flour
Instructions
- Whisk together the bread flour, whole-wheat flour and salt in a large bowl. Add 1¼ cups (300 grams) warm water, Sourdough Starter, and oil; stir together until a shaggy dough forms and no dry spots remain.
- Cover and let rise in a warm, draft-free place (75°F/24°C) for 4 hours, folding dough in bowl every 1 hour. To fold, gently stretch and pull one side of the dough and fold it back on itself. Repeat this process for all four sides.
