Rhubarb Muffins
Makes 18
Ingredients
  • 2¾ cups all-purpose flour, divided
  • ¼ cup old-fashioned oats
  • 1¾ cups firmly packed light brown sugar, divided
  • 1 teaspoon ground cinnamon
  • ¼ cup frozen butter, grated
  • ¾ cup chopped pecans
  • ½ cup vegetable oil
  • 2 eggs
  • ½ cup plain yogurt
  • Vanilla Extract 2 Tsp.
  • Baking powder, 1 teaspoon
  • Baking soda, 1 tablespoon
  • One teaspoon of fine sea salt
  • Fresh or frozen, 2 cups of rhubarb chopped

Instructions
  1. Preheat oven to 350°. Line 18 muffin wells with paper liners.
  2. In a small bowl, stir together ¼ cup flour, oats, ¼ cup brown sugar, and cinnamon. With a pastry cutter or a fork cut grated butter in until the mixture is crumbly. Stir in pecans. Set aside.
