Cod with Tomato and Corn Curry
This party-worthy main course is one of the best uses of peak-season tomato and corn we’ve ever tried. It’s a bit cheffy to make corn broth with leftover corn cobs, but it adds a layer of flavor you can’t get otherwise. If that’s one step too many, feel free to skip! The curry can be made the day before or the morning of the party.

Zucchini Gemelli Cilantro Pesto
This dish is an excellent blend of Italian and Mexican tastes. It’s also efficient: the pasta and zucchini are cooked in the same pot. You can use any type of pasta, but a twisted one will help to trap the pesto in each bite.
